1997 Beringer Private Reserve Cabernet Sauvignon
VW: Showing both cedar and vanilla on the nose, plus dark fruits especially currants. On open, the palate is tight and tannic, high flavour intensity with berries, currants and plums. Long finish of dark berries and vanilla. After time in glass, the wine open up quickly. Some soya milk added to the nose, more plums. Palate became open knitted and sweeter. It was able to hold up till the end of the meal. It is drinking well now. As it evolve quickly after open, I guess it should not be further cellared for too long. Delicious. 93 (Dec 2, 2007)
